For the biscuit dough:

  • 2 cup all-purpose flour
  • 5 tbsp unsalted butter cold
  • 2/3 cup buttermilk cold
  • 2 tbsp honey
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 pinch salt
  • Extra flour for kneading

For the honey butter glaze:

  • 3 tbsp salted butter melted
  • 2 tbsp honey

  • Preheat oven to 425°F. Spray baking tray with nonstick spray, or use butter to grease the tray.
  • In a stand mixer, add in all-purpose, flour, baking powder, baking soda, and salt. Mix on low speed to combine.
  • Cut the butter into small chunks. Add to the flour. Mix on low speed until the flour mixture becomes crumbly.
  • Add honey and continue mixing to combine.
  • Make a well in the center of the flour mixture and add in buttermilk. Mix until everything is just combined. The dough should be a bit sticky.
  • Dump the dough out onto a floured work surface, sprinkle some more flour on top of the dough and form it into a ball. Knead for a couple of times so that all of the clumps come together, pat it down and form it into a disk, about ½ inch thick.
  • Cut out the biscuits with a round pastry cutter, about 2” in diameter. Gather dough scraps and form them into a disk again and cut out more biscuits. This recipe should give you 10 biscuits in total.
  • Put the biscuits onto the greased baking tray, placing separately from each other (about 1” in between).
  • In a small bowl, combine honey and melted butter, and mix well. Then use a pastry brush and brush the honey butter glaze onto biscuits.
  • Place the baking tray in the oven and bake for 10-13 minutes or until the biscuits are golden brown on top.
  • Take the biscuits out of the oven and brush them with more honey butter glaze. Leave to cool a bit before serving.
