This roasted carrots recipe cannot get any easier. It only takes a few minutes to prep, then into the oven it goes. Meanwhile you can prepare the main dish, and maybe some dessert, while letting the oven do its magic. Now that sounds like a dinner plan!

  • 1 lb whole baby carrot
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 6 thyme sprigs optional
  • 2 tbsp garlic minced
  • 1 tbsp olive oil



  • Wash and scrub carrots thoroughly to remove any dirt. Pat dry with a paper towel and slice in half lengthwise.


  • Preheat the oven to 450°Line a baking tray with parchment paper or aluminum foil.
  • Spread carrots evenly on the baking tray. Sprinkle salt, black pepper, thyme, and garlic. Drizzle olive oil over the top and toss to coat.
  • Roast in the oven for 40 minutes or until tender, flipping halfway through.



Check the oven occasionally. Rotate the tray if the heat is not evenly distributed.
