Single Edged Blade
The hand-made steel blade is durable and resistant to corrosion. The blade has a single right-hand angle. A single cutting edge allows for finer, thinner cuts. The single cutting edge also prevents vegetables from sticking to the blade as much as they do to dual cutting edges. A single cutting edge is easier to maintain, but learning to sharpen it can take a little practice.
The seven-inch blade is taper ground on one end and the other is hollow ground. It is made from 420J2 steel which is corrosion resistant and will retain its edge over time.
The blades are forged and then polished, ground and sharpened. Each knife undergoes 19 processes before it is ready for distribution. The end result is a Rockwell Shore Hardness measure of 60. Blades from steel this hard will stay sharp for longer, but they will chip if dropped on a hard surface. The blade has a nice curved belly for even rocking when cutting vegetables.
