To make a healthier version, we checked the ingredients of pumpkin juice and tried to re-create the most authentic version, using homemade pumpkin puree, raw apple juice, and natural sweeteners like honey or maple syrup. Here are some tips for our tasty, healthy homemade pumpkin juice:
–For the pumpkin puree: to make pumpkin puree, people usually steam the pumpkin cubes before blending. But for us, roasting is the best option. Roasting helps water of the pumpkin flesh to evaporate and maintain its natural sweetness. Fill your baking sheet with an inch of water to avoid burning your pumpkin. Making pumpkin puree requires a little time and effort, but you’ll find that it’s worth the while— it can be used for many different dishes (check out our healthy pumpkin soup recipe here) and be kept in the refrigerator for a week.
–For the apple juice: fresh apple juice turns brown when exposed to the air even for a short time. This polyphenols process actually doesn’t reduce the quality of the juice, it simply makes it look less delicious. A trick to stop it from discoloring is to add some drops of lemon. You can add a pinch of salt to balance the sweetness and enhance the flavor of the apple.

- 6 cup raw apple juice
- ¾ cup pumpkin puree
- 4 tbsp maple syrup
- ½ tsp pumpkin pie spice
